Sapphire Blue

A handsome cheese with a magnificent natural rind that can be aged up to 4 months. The cheese gives a wonderful balance of salt and sweet and a texture of smooth and crunchy.

Fire Engine Red - Washed Rind

2011 Grand Champion Winner!

"In honour of the Fire Engines and the Firemen who fought tirelessly to defend the Jindi factory in February 2009. This cheese expresses many of the characteristics of those wonderful people. Its powerful, and courageous, aromatic and at times challenging, but let it work over the palate and the memory will linger on.

The red rind occurs by regular scrubbing with Brevibacterium linens. The affect of the bacteria contributes to the strong and at time over powering aroma of this cheese. One might well ask ‘how can a cheese that smells so bad taste so good? In true French tradition it is recommended for first timers to peel the rind back and scoop the cheese from the middle. Its flavour characteristics will include caramel and cauliflower and cabbage, it has a soft texture and is a truly flavour driven cheese." - OTR by Jindi

Triple Cream White

A classic Triple Cream with 75% butter fat similar to the real French Triple Creams. Its glorious white rind hides the smooth, creamy paste that slides across the palate leaving silky smooth feelings on the tongue.

A typically Northern Italian cornmeal used as a carbohydrate base for meals, especially roasts and slow cooked meat dishes with lots of pan juices. Blooker Cacao, fine Dutch Cocoa powder, developed with a lower acidity to make it more soluble, which is a neccessary quality for the chef or home cook. 'Dutched' cocoa has a milder flavour than unprocessed cocoa powder, with a darker appearance. Always be sure to use the required cocoa in your recipe, as the end result may be extremely different, and your wonderful creation may not be successful. This is because of the lack of acidity in the 'Dutched' cocoa, so be sure that you don't substitute for it if you don't have any at the time. Making fresh this Thursday. A delicious lasagna made with lean chicken thigh mince, bechamel, tomato neopolitan and fresh lasagna sheets. Our second most popular lasagna to the Gourmet Baked Meat. Serve with a salad and our Garlic French Sticks for a quick and easy dinner that the whole family will enjoy.

Sauces
Did you know we only use olive oil in all our cooking? We do not use any blended oils or vegetable oils, including those that fall within the 'trans fats' category. Our sauces are very tasty and are full of ingredients so you can just heat and mix it with your favourite pasta shape. They are also great for other recipes ie. use Wild Mushroom Cream Sauce as a sauce for your veal or chicken steaks.
